This is my second attempt at a blog. Blog number one was called a little bowl of yum. I posted twice before loosing the interest or motivation or something. I'm not sure why. I have been blaming the fact that I have barly written a word in years on the fact that I was working early hours at a bakery and my most productive hours have always been in the morning. Now that I am working nights. I can't really use that excuse anymore.
So this is my attempt number two. I will write. I will write about the food I cook and the things I knit and the quilts I sew. I may write about some other things along the way. Deep breath. Jumping in.
This morning I am doing my Friday baking for my mother in laws lab meeting. I started doing this about a year ago as a way to test recipes without ending up with a whole cake for me and my husband to eat. Also so they didn't have to eat Safeway cookies and muffins anymore. Today I am playing around with replacing butter in Quickbreads in preparation for a class I am teaching on the 17th, Intro to Baking Substitutions. Last week I made a pound cake with yogurt instead of butter (kinda dense, chewy, but ok flavor. It would have been better if it was a sponge cake I think) and banana instead of butter in a quickbread, which was surprisingly good. It was a little but like cornbread in texture, and just a little banana flavor. Next time I think I will increase the banana for more moisture and flavor.
Today I made two more, same recipe as the banana. In one I subbed applesauce, and in the other avocado. I know. Weird. I almost didn't do that one. But the point of all this is to try out new things so try I did. It's not bad. A little more dense and moist the usual but not as dense as I expected. I topped it with a lime glaze. The applesauce cake also has some shredded carrots. It's still in the oven. Mmmmm the smell of carrot cake in the morning.
